To make dashi, add 15g of kombu to 1L of water and heat on high. Remove the kombu right before the water boils. Add seasonings like salt, shoyu etc. to your taste.

For other dishes like stir-fries, salads, and furikake, soften the kombu first in a bowl of water for 10-20 minutes, or until tender. 

Other ways to use this kombu are in kobumaki (stuffed kombu roll), making knots of kombu for oden soup, or tsukudani (foods simmered in sweetened soy sauce).
